VINIFICATION

Destemming without pressing. In the tank for a 20-day maceration at a monitored temperature. Racking and passage in tonneau of 500 lt for

12 months. Poured in steel for 2 months before bottling.

Color: very intense ruby red.

Nose: Notes of cherry with hints of undergrowth, wild grass and anise.

Palate: Ample, enchanting, balanced, with soft tannins and strong minerality thanks to the volcanic nature of the land.
